Description

A warm and flavorful Indian beef curry that’s perfect for slow cooking.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons curry powder
  • 1 tablespoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can (14 oz) coconut milk
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon salt
  • 1 tablespoon lime juice
  • 2 cups chopped spinach


Instructions

  1. In a large bowl, combine beef with curry powder, turmeric, cumin, coriander, cinnamon, and cayenne pepper.
  2. Place the seasoned beef in the slow cooker with onion, garlic, and ginger.
  3. Add coconut milk, diced tomatoes, beef broth, and salt to the slow cooker.
  4. Cover and cook on low for 8 hours or on high for 4 hours.
  5. Before serving, stir in lime juice and chopped spinach.
  6. Serve warm with rice or naan.

Notes

  • For added flavor, marinate the beef overnight with spices.
  • This dish pairs well with basmati rice.
