A warm and flavorful Indian beef curry that’s perfect for slow cooking.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons curry powder
- 1 tablespoon turmeric
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/2 teaspoon cayenne pepper
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon salt
- 1 tablespoon lime juice
- 2 cups chopped spinach
Instructions
- In a large bowl, combine beef with curry powder, turmeric, cumin, coriander, cinnamon, and cayenne pepper.
- Place the seasoned beef in the slow cooker with onion, garlic, and ginger.
- Add coconut milk, diced tomatoes, beef broth, and salt to the slow cooker.
- Cover and cook on low for 8 hours or on high for 4 hours.
- Before serving, stir in lime juice and chopped spinach.
- Serve warm with rice or naan.
Notes
- For added flavor, marinate the beef overnight with spices.
- This dish pairs well with basmati rice.
