This Slow Cooker Pepper Steak is a comforting dish that cooks itself, filled with tender beef and colorful peppers.
Ingredients

- 2 pounds flank steak, sliced against the grain
- 1 cup beef broth
- 1/2 cup soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 2 cups bell peppers, sliced (red, green, and yellow)
- 1 onion, sliced
- 2 tablespoons cornstarch
- 2 tablespoons water
Instructions
- Place the flank steak in the slow cooker.
- In a bowl, mix the beef broth, soy sauce, garlic powder, and ground ginger. Pour over the steak.
- Add bell peppers and onion to the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 4-6 hours.
- In the last 30 minutes of cooking, combine cornstarch and water in a small bowl, then stir into the slow cooker.
- Serve over rice or noodles.
