Description
A hearty and nutritious Turkish stew made with bulgur, red lentils, and a blend of spices.
Ingredients

- 1 cup red lentils
- 1/2 cup bulgur
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 2 tablespoons tomato paste
- 2 teaspoons paprika
- 1 teaspoon red pepper flakes
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
- Stir in the tomato paste, paprika, and red pepper flakes, cooking for another minute.
- Add the red lentils, bulgur, and vegetable broth to the pot. Bring to a boil.
- Reduce the heat and simmer for about 20-25 minutes, or until the lentils and bulgur are tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- This stew can be stored in the fridge for up to 3 days.
- It can also be frozen for up to 3 months.
- Add more spices to increase the heat if desired.
