Description

A hearty and nutritious Turkish stew made with bulgur, red lentils, and a blend of spices.


Ingredients

  • 1 cup red lentils
  • 1/2 cup bulgur
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon red pepper flakes
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
  2. Stir in the tomato paste, paprika, and red pepper flakes, cooking for another minute.
  3. Add the red lentils, bulgur, and vegetable broth to the pot. Bring to a boil.
  4. Reduce the heat and simmer for about 20-25 minutes, or until the lentils and bulgur are tender.
  5. Season with salt and black pepper to taste.
  6. Serve hot, garnished with fresh parsley.

Notes

  • This stew can be stored in the fridge for up to 3 days.
  • It can also be frozen for up to 3 months.
  • Add more spices to increase the heat if desired.
