Delicious poblanos stuffed with turkey enchilada filling, perfect for a hearty meal.
Ingredients

- 4 large poblano peppers
- 1 pound ground turkey
- 1 cup enchilada sauce
- 1 cup shredded cheese
- 1/2 cup black beans
- 1/2 cup corn
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chopped cilantro
Instructions
- Preheat the oven to 375°F (190°C).
- Roast the poblano peppers until the skin is blistered.
- In a skillet, cook the ground turkey until browned.
- Add beans, corn, spices, and half of the enchilada sauce to the turkey.
- Stuff the roasted poblanos with the turkey mixture.
- Top with remaining enchilada sauce and cheese.
- Bake for 20-25 minutes until cheese is bubbly.
- Garnish with cilantro before serving.
Notes
- For a spicier dish, add diced jalapeños to the stuffing.
- Can be served with sour cream and avocado on the side.
