- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup corn
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 cup shredded cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and bell pepper, and cook until softened.
- Add the minced garlic and cook for another minute.
- Add the ground turkey and cook until browned.
- Stir in the taco seasoning, corn, black beans, and diced tomatoes.
- Cook until heated through and then sprinkle with cheese.
- Cover the skillet until the cheese melts.
