Description

This delightful Upside-Down Mandarin Cake features a moist cake topped with caramelized mandarin oranges, creating a beautiful presentation and delicious flavor.


Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 cups mandarin oranges, drained and halved
  • 1/2 cup brown sugar


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  6. In a greased cake pan, sprinkle the brown sugar and arrange the mandarin oranges on top.
  7. Pour the cake batter over the mandarins, smoothing the top.
  8. Bake in preheated oven for 30-35 minutes or until a toothpick comes out clean.
  9. Allow the cake to cool for 10 minutes before inverting onto a serving plate.
