Description

A refreshing salad featuring seasonal citrus mixed with crisp, slightly bitter Belgian endive.


Ingredients

  • 2 Belgian endives
  • 2 oranges
  • 1 grapefruit
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste


Instructions

  1. Slice the Belgian endives into thin strips and place in a large salad bowl.
  2. Supreme the oranges and grapefruit, removing the peel and pith, and add to the bowl.
  3. Add the red onion and walnuts to the salad bowl.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad and toss gently to combine.
  6. Serve immediately.
